I made a sausage and cheese tortellini soup for supper tonight. I browned two pounds of Italian sausage, 1 package sweet, one hot, in a large dutch oven, then added some onion. I next put in a small can of tomato paste, followed by powdered thyme and oregano, a couple of teaspoons of minced garlic, ground pepper, and some red pepper flakes. Then added a large can of fire roasted diced tomatoes, 4 cups of vegetable broth, 2 cups of beef broth , a chopped up red bell pepper and the cheese tortellini and let it simmer for a while before I added the final ingredients just before serving, some baby spinach and some fresh Italian parsley. Very good stuff. The recipe actually called for fresh kale instead of spinach, but I couldn't find any kale.
