Going to do a leg of lamb in the smoker (Bradley electric). Haven't done lamb before.
Pretty basic recipe. pureed 10 cloves of garlic with some salt and olive oil yesterday, butterfled the leg (boneless), covered it thoroughly on both sides with the garlic paste. This afternoon I'm browning some garlic and onion in olive oil, adding chopped cooked spinach, goat cheese and chopped walnuts, spreading that on the leg, rolling it up and tying with string. Going to give it about two hours at 220 (half an hour per pound) or until internal temp is 145. Using mesquite wood.
Serving with mashed potatoes and steamed asparagus.
Looking forward to seeing how it works out. I'm not a big fan of eating sheep, but Mrs. LC is.
