Boneless. Using applewood doodads. 225 for maybe 3 hours, however long it takes to reach 140 degrees. Simple rub with oregano, salt, pepper, thyme, garlic, olive oil.

Plan to serve it with roasted brussel sprouts and a spaetzel and squash dish we brought home from dinner at the Indigo Room in Amana (our second visit there, both were superb).

Tomorrow is Mrs. LC's birthday and we are just going to brunch at Cedar Rapids Winery, so thought we could put on the dog a little tonight. Technically, of course, it's put on the sheep.
